Wheat Germ Banana Bread
- 1 1/2 cups flour, all-purpose or whole wheat
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup wheat germ
- 3 medium bananas very ripe, mashed
- 1/4 cup vegetable oil
- 4 large egg whites
- Preheat oven to 325F (160C) degrees.
- Butter and flour a 13 by 9-inch loaf pan.
- Whisk together the flour, sugar, baking powder, soda, salt and wheat germ in a large bowl until well blended.
- In another medium bowl, whisk together bananas, vegetable oil and egg whites until smooth and well mixed.
- Pour the wet ingredients into the dry ingredients until just incorporated, do not over mix.
- Pour the batter in the prepared loaf pan and bake for about 1 1/4 hours or until a wooden stick inserted into the centre comes out clean.
- Cool in the pan on a wire rack for 10 minutes.
- Turn the bread out of the pan and cool completely on the wire rack.
- Serve.
- The bread slices can be frozen well.
