Thai Mango Salad
- 1 lime, juice and zest
- 2 tablespoons fish sauce
- 2 teaspoons superfine sugar
- 2 garlic cloves, minced
- 2 green chili peppers, deseeded and finely sliced
- 2 mangoes, peeled, stoned and cut into matchstick strips
- 2 carrots, cut into matchsticks
- 2 zucchini, cut into matchsticks
- mint sprig, to garnish
- Place the lime juice, fish sauce, sugar, garlic and chilis in a bowl and stir until the sugar has dissolved.
- Place the fruit and vegetables in a bowl and toss with the dressing.
- Sprinkle with the lime zest and garnish with mint sprigs.
