Tilapia

  1. preheat oven to 375.
  2. use glass or metal pan.
  3. sprinkle lemon pepper over fillet.
  4. top each with a teaspoon of butter and bake in oven for 20 to 25 minutes.
  5. fish should flake easy with a fork.
  6. while its baking heat an additional 3 teaspoons of butter in pan until bubbling.
  7. add egg yolks to butter and the lemon juice.
  8. pull off heat and whisk like crazy until sauce is thickened and creamy.
  9. top the finished tilapia and enjoy.
