Fresh Blueberry Cobbler
- 3 Tbsp. cornstarch
- 1/2 c. sugar
- 6 c. picked over blueberries
- 2 Tbsp. lemon juice
- 1 1/2 c. all-purpose flour
- 1/2 c. packed brown sugar
- 1 1/2 tsp. double acting baking powder
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 1 stick butter (oleo), cut into bits
- 1/4 c. plus 2 Tbsp. boiling water
- Toss first 4 ingredients in large bowl until combined well. Put in 10-inch or 6-cup deep dish pie plate.
- In a bowl combine flour, brown sugar, baking powder, salt, cinnamon and butter until resembles a coarse meal.
- Add boiling water and mix (forms a dough).
- Drop over blueberry mixture and bake on a baking sheet in middle of preheated 400u0b0 oven, 30 to 40 minutes, until topping is golden.
- Serve warm with French vanilla frozen yogurt or ice cream.
