Watermelon Air with Sea Urchin (Aire de Sandia con Erizos de Mar)

  1. Combine the watermelon juice with the lecithin.
  2. Mix with a hand blender, tilting the bowl to incorporate air.
  3. Put the sea urchin in shallow bowls.
  4. Dress with olive oil and lime juice and top with the watermelon mixture.
