Meatballs in Tomato Sauce - Great with Pasta
- 2 small Eggplant (slim Japanese type)
- 1/2 large Onion
- 1 clove Garlic
- 20 Green beans (frozen are fine)
- 300 grams Ground pork
- 1 tsp Soy sauce
- 2 tsp Sake
- 1 Salt and pepper
- 2 tsp Sesame oil
- 2 tbsp Olive oil
- 1 Red chili peppers
- 1/2 tsp Soy sauce
- 1 can Canned cut tomatoes
- 2 tsp Soup stock granules
- 2 tbsp Ketchup
- 2 tbsp Japanese Worcestershire-style sauce
- 2 tbsp Milk
- 1 to 2 tablespoons Honey
- 1 dash Salt and pepper
- 1 tsp Instant coffee
- 1 leaf Bay leaf (optional)
- Slice the eggplants and soak in water to get rid of the bitterness.
- Mince the onion and garlic.
- Cut the green beans in half.
- In a bowl, mix the ground pork, chopped onion and ingredients and knead well.
- Divide into about 16 portions (make the portions small) and roll into balls.
- Heat olive oil, chopped garlic, and red chili pepper in a deep pan.
- Add the meatballs and fry them while rolling them around over high heat.
- When the meatballs have browned...
- Add the drained eggplant slices from Step 1 and fry (until the eggplant has absorbed the oil and become limp).
- Add the canned tomatoes...
- Add the ingredients.
- When the sauce is bubbly, add the green beans.
- Simmer over medium low heat until the sauce has thickened.
- Drizzle on the soy sauce and toss lightly to finish.
- Serve and enjoy.
