Banana Nut Bread, Mccall's Recipe
- 2 1/2 c. sifted all purpose flour
- 3 tsp baking pwdr
- 1/2 tsp salt
- 1 c. sugar
- 1/4 c. soft butter or possibly margarine
- 1 x egg beaten
- 1 c. mashed bananas 3 small ripe
- 2 Tbsp. grated orange peel or possibly lemon peel
- 1/2 c. lowfat milk
- 1 c. minced pecans or possibly walnuts
- Preheat oven to 350F.
- Grease a 9-by-5-by-3-inch loaf pan.
- Sift flour with baking pwdr and salt; set aside.
- In medium bowl, with portable electric mixer or possibly wooden spoon, beat sugar, butter, and egg till smooth.
- Add in bananas, orange peel, and lowfat milk, mixing well.
- Add in flour mix, beating just till smooth.
- Stir in nuts.
- Pour batter into prepared pan; bake about 1 hour, or possibly till cake tester inserted in center comes out clean.
- Let cook in pan 10 min.
- Remove from pan; cold completely on wire rack.
- To serve, cut into 12 slices.
- Makes 1 loaf cut into 12 slices.
- Yield: 12 slices
- NOTES : I added 1/2 tsp.
- vanilla, this is the banana bread I made prior to becoming a diabetic.
