Banana Nut Bread, Mccall's Recipe

  1. Preheat oven to 350F.
  2. Grease a 9-by-5-by-3-inch loaf pan.
  3. Sift flour with baking pwdr and salt; set aside.
  4. In medium bowl, with portable electric mixer or possibly wooden spoon, beat sugar, butter, and egg till smooth.
  5. Add in bananas, orange peel, and lowfat milk, mixing well.
  6. Add in flour mix, beating just till smooth.
  7. Stir in nuts.
  8. Pour batter into prepared pan; bake about 1 hour, or possibly till cake tester inserted in center comes out clean.
  9. Let cook in pan 10 min.
  10. Remove from pan; cold completely on wire rack.
  11. To serve, cut into 12 slices.
  12. Makes 1 loaf cut into 12 slices.
  13. Yield: 12 slices
  14. NOTES : I added 1/2 tsp.
  15. vanilla, this is the banana bread I made prior to becoming a diabetic.
