Ashley's Angel Food Cake

  1. Beat egg whites (at room temp) until foamy.
  2. Add cream of tartar and salt; beat until soft peaks form.
  3. Add sugar, 2 tablespoons at a time, beating until stiff peaks form.
  4. Sprinkle flour over egg mixture, 1/4 cup at a time, fold in carefully.
  5. Fold in vanilla.
  6. Pour batter into an UNGREASED 10 inch tube pan, spreading evenly.
  7. Bake at 375F for 30 to 35 minutes or until cake springs back when lightly touched.
  8. Invert pan over a bottle, cool 40 minutes.
  9. Loosen cake from sides of pan using a narrow metal spatula; remove from pan.
