Cobb Salad with Homemade French dressing
- 1 avocado
- 2 red turnips
- 1/2 carrot
- 2 eggs
- 1/3 can Spam
- 2 Tbsp mayonnaise
- 1 Tbsp *soy milk
- 1 tsp *dried parsley
- 1 tsp *vineger
- 1 tsp olive oil
- 1 tsp lemon juice
- Make a hard boiled eggs and roughly chop into small pieces.
- Slice the carrots and red turnips, tear the greens into bite-size pieces and put on a plate.
- Slice the spam into 1cm slices and cut each piece in half.
- Fry in a pan - without oil - until browned and crispy (important for best flavour!).
- Once cooked, let to cool for a while.
- Remove the skin and chop the avocado into 2 cm cubes and put them into a bowl.
- Pour on 1 tsp olive oil, 1 tsp lemon juice and and season with salt and pepper.
- Gently mix all together well (be careful not to mash the avocado if soft).
- Arrange the salad ingredients, mixed up if you wish, onto the plate with the greens.
- Try to be creative with the presentation!
- To make the dressing, mix the mayonnaise, soy milk, parsley, vinegar, salt and pepper then pour on the salad.
- Enjoy!
