Mazatlan Main Dish Dip Recipe
- 1 pound lean grnd beef or possibly grnd turkey
- 1 med. onion, minced
- 28 ounce. can refried beans
- 4 ounce. can green chilies, diced and liquid removed
- 1/2 c. shredded Monterey Jack cheese
- 12 ounce. jar green chili salsa
- 1 med. avocado, mashed
- 1 c. lowfat sour cream
- 1/4 c. minced green onion
- 8 ounce. pitted ripe olives, sliced
- Tortilla chips/vegetable sticks
- 1.
- Microwave grnd meat and onion on high to brown, approximately 3 min.
- Stir frequently.
- Drain off fat.
- 2.
- Spread refried beans in 2 qt casserole dish and top with meat mix.
- 3.
- Layer chilies, cheese and salsa over meat.
- 4.
- Microwave on high 5 min.
- 5.
- Combine avocado and lowfat sour cream.
- Spoon over heated mix.
- Garnish with green onions and olives.
- 6.
- Serve with crisp vegetable sticks or possibly tortilla chips.
