One Pot Curry & Rice

  1. Mix dressing and curry powder; pour over chicken.
  2. Cover and refrigerate 10 minutes.
  3. Pour chicken mixture into large skillet.
  4. Add celery, carrots and onions; mix well.
  5. Cook on medium-high heat 2 minutes, stirring occasionally.
  6. Stir in chicken broth.
  7. Bring to boil.
  8. Cover skillet.
  9. Reduce heat to medium-low; simmer 5 minutes.
  10. Add rice, apricots, cashews and ginger; mix well.
  11. Remove from heat.
  12. Let stand, covered, 5 minutes.
  13. Stir before serving.
