Ziti With Portabella Mushrooms and Goat Cheese Sauce

  1. Remove stems from mushrooms.
  2. Cut caps in half and slice crosswise into 1/4-inch slices; set aside.
  3. Heat 2 T butter and 2 T oil in a large skillet over medium heat.
  4. Add onion, 1/2 tsp salt, and sugar; saute 20 minutes.
  5. Add shallots; saute 5 minutes or until tender.
  6. Add garlic and scallions; saute 2 minutes.
  7. Remove from pan and set aside.
  8. Heat remaining 2 T butter and 2 T oil in the skillet.
  9. Add mushrooms and remaining 1/2 tsp salt.
  10. Saute 8 to 10 minutes, stirring occasionally, or until tender.
  11. Stir in reserved onion mixture.
  12. Cook over low heat until pasta and sauce are prepared.
  13. Cook ziti in 6 qts.
  14. boiling water and 1 T salt according to package directions until al dente; drain.
  15. Rinse pasta in cool water; drain.
  16. Toss ziti with mushroom mixture and place in a large serving dish.
  17. Top with Goat Cheese Sauce and garnish with chives.
  18. Goat Cheese Sauce directions: Pour cream into a medium saucepan over medium heat.
  19. Bring to a boil, reduce heat, and simmer 15 minutes or until reduced by one-third.
  20. Remove from heat.
  21. Add goat cheese, stirring until smooth.
  22. Stir in chives.
  23. Season to taste with salt and pepper.
