Chunky Tomato Vegetable Soup
- 2 Tbsp. butter
- 3 carrots, chopped Target 2 lb For $3.00 thru 02/06
- 2 stalks celery, chopped
- 1 onion, chopped
- 1 can (28 oz / 796 mL) diced tomatoes Safeway 1 lb For $1.29 thru 02/09
- 1 can (10 oz) condensed tomato soup
- 1 soup can water
- 2 tsp. dried basil leaves
- 1 zucchini, chopped
- 1/2 cup baby medium pasta shells or macaroni
- Cook carrots, celery and onion in large saucepan in butter over medium heat for 3 minutes.
- Stir in tomatoes, soup, water and basil.
- Bring to a boil.
- Stir in zucchini and pasta.
- Cover and simmer over low heat 15 minutes, stirring occasionally, or until pasta is tender.
- Serve immediately.
