Acapulco Rice
- 16 ounces tomato sauce
- 1/2 cup water
- 3 teaspoons chili powder
- 1/2 cup tortilla chips crushed
- 1/2 cup cheddar cheese shredded
- 1 1/2 cups minute rice
- Combine tomato sauce, water and chili powder in a medium sized saucepan.
- Bring to a full boil.
- Stir in rice.
- Cover, remove from heat and let stand for 10 minutes.
- Sprinkle with tortilla chips and cheese.
- Serve with shredded lettuce and sour cream if desired.
