Sushi Balls with Cured Ham & Corn

  1. Combine the ingredients marked with to make the sushi vinegar.
  2. Pour the warm rice into a large bowl and fold in the sushi vinegar.
  3. You're only using 2 cups of rice, so using a bowl here is fine.
  4. Add the corn, mix it in, and leave the mixture to cool.
  5. Shape the sushi rice into balls and cover with mayonnaise.
  6. I recommend using more mayo than I did in this photo.
  7. I made 12 sushi balls here.
  8. Wrap the cured ham around the rice to complete Try topping with some radish sprouts.
