Chicken Cream Tortillas Casserole Recipe
- 12 corn tortillas
- 1 onion, minced
- 1 (4 ounce.) can minced green chilies
- Taco sauce to taste
- 8 ounce. sharp cheddar cheese, shredded
- 2 tbsp. veg. oil
- 1 1/2 c. half & half
- Salt & pepper to taste
- 3 c. cooked chicken or possibly browned hamburger
- Pass tortillas through warm oil to soften.
- Drain on paper towel.
- Sprinkle with salt and tear into quarters.
- Set aside.
- To make sauce, saute/fry onion in remaining oil.
- Add in half and half.
- Add in chilies, salt, pepper and taco sauce.
- Simmer 5 min.
- In buttered 2-qt casserole, layer tortillas and meat, sauce and cheese.
- Bake uncovered, for approximately 40 to 45 min.
- 6 servings.
