Herb-Crusted Creamy Jalapeno Stuffed Chicken
- 4 small boneless skinless chicken breasts (1 lb.), pounded to 1/4-inch thickness
- 1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Spicy Jalapeno Cream Cheese Spread
- 1/2 cup panko bread crumbs
- 1 tsp. lemon zest
- 1 Tbsp. minced fresh chives
- 1 Tbsp. extra virgin olive oil
- Heat oven to 375 degrees F.
- Place chicken, top sides down, on work surface; spread with cream cheese spread.
- Roll up tightly, starting at one short end of each breast.
- Place, seam sides down, in single layer in shallow pan sprayed with cooking spray.
- Combine remaining ingredients; press on tops and sides of roll-ups.
- Bake 35 min.
- or until chicken is done (165 degrees F).
