Shrimp Yummies

  1. Preheat the oven to 350F
  2. To make the stuffing, crush the crackers thorougly and place in a small bowl with the melted butter and sherry.
  3. Mix thoroughly & add salt & pepper to taste.
  4. The crackers will soak up the sherry & butter to make a thick paste.
  5. Slice each shrimp down the back to create a pocket.
  6. Stuff the shrimp with the cracker mixture.
  7. Place in a lightly greased baking pan & bake for 10 minutes or until the shrimp turn pink.
  8. Arrange the lettuce leaves on a serving platter or on individual plates.
  9. Place the shrimp on top of the lettuce & serve.
