Ginger-Soy Vinaigrette
- 1 1/2 teaspoons finely grated fresh ginger
- 1 teaspoon tamari soy sauce
- 2 tablespoons rice wine vinegar
- Coarse salt and freshly ground pepper
- 1/4 cup plus 2 tablespoons sunflower or safflower oil
- Thinly sliced scallions (optional)
- WHISK TOGETHER ginger, tamari, vinegar, and salt and pepper to taste in a bowl, then gradually whisk in oil, adding it in a slow, steady stream, and continue whisking until mixture is emulsified.
- Stir in scallions, if desired.
