Ginger-Soy Vinaigrette

  1. WHISK TOGETHER ginger, tamari, vinegar, and salt and pepper to taste in a bowl, then gradually whisk in oil, adding it in a slow, steady stream, and continue whisking until mixture is emulsified.
  2. Stir in scallions, if desired.
