Diabetic Fruit Bars Recipe
- 1 1/4 c. flour
- 1 c. quick oats
- 1/2 teaspoon salt
- 1 tbsp. liquid food sweetener
- 1 teaspoon vanilla
- 1/2 c. vegetable shortening
- 2 c. liquid removed unsweetened canned fruit such as apples, cherries
- 3 tbsp. fruit juice
- Mix flour, oats, salt, sweetener, vanilla and vegetable shortening with fork till crumbly.
- Add in juices to let crumbs stick together.
- Spread half on bottom of square pan.
- Place layer of fruit, spread rest of crumbs on top.
- Bake, cold and cut in squares.
