Molded Cucumber Salad Recipe

  2. In medium bowl, dissolve gelatin in 1 c. boiling water; set aside.

  4. Shred cucumber and onion over small ball.
  5. Squeeze liquid from cucumber and onion into 2 c. glass measuring c.; reserve vegetables.
  6. Add in sufficient cool water to vegetable liquid to make 1 1/2 c.; add in to dissolved gelatin with vinegar and 1/4 tsp.

  9. Refrigeratetill gelatin is the consistency of unbeaten egg white.
  10. Stir in reserved cucumber and onion.
  11. Pour into 1 qt mold.
  12. Chill till hard, 2 to 3 hrs.

  14. To serve, unmold on lettuce; garnish with cucumber slices if you like.
  15. Makes 4 servings; 20 calories each.
