Portabella mushroom burger
- 2 large portobello mushroom caps, cleaned
- 1 tbsp olive oil
- 1 dash salt
- 1 dash pepper
- 2 slice swiss cheese
- 1/2 small onion, rings
- 1/2 red pepper, seeded, roasted
- 1/2 tomato, sliced
- 1 avacado, sliced
- 1/4 cup basil, tightly packed
- 2 tbsp mayonnaise
- 2 buns, toasted
- Heat grill.
- Coat mushrooms in olive oil.
- Season.
- Place mushrooms on grill cap side down first.
- Cook 3-4 minutes.
- Flip then cook another 3 minutes.
- Add cheese and cook 1 more minute.
- Spread mayo on bun then stack the mushroom and toppings on bun.
