Bartlett Graham Cracker Bars

  1. Core and dice pears to measure 1-1/2 cups.
  2. Line a 9 x 13 inch pan with whole graham crackers.
  3. Combine diced pears, brown sugar, butter, milk, coconut and graham cracker crumbs in saucepan; boil until thick.
  4. Spread over crackers.
  5. Top with another layer of whole crackers.
  6. Melt butterscotch chips; spread over crackers.
  7. Cut bars in shape of crackers.
  8. Store in refrigerator.
  9. Makes about 30 bar cookies.
