Easy, Easy Saffron Chicken Recipe vickib

  1. Preheat the oven to 450 degrees.
  2. A well-seasoned cast iron skillet is my preferred pan, but a casserole works as well.
  3. Put 1 T. oil in the bottom of pan, and then layer in the onions.
  4. Lay the chicken on top of the onions.
  5. Salt and pepper.
  6. Sprinkle the garlic over the chicken, and then the Saffron.
  7. Drizzle with remaining olive oil.
  8. Bake until brown, and chicken is cooked through.
  9. In a convection oven with cast iron, about 30 min.
  10. With a glass dish, about 45.
  11. Squeeze the lemon over the skillet.
  12. Let rest for 5 min.
  13. before serving.
