Baked Breakfast Cup
- 2 ramekins or oven proof mugs
- 2 slice crustless buttered bread
- 2 slice bacon
- 2 eggs
- 2 tsp chopped spinach (optional for colour contrast)
- 1 pinch of salt and pepper
- 1 handful of good strong grated cheese (whatever you prefer melted on top)
- 1 pinch of finely chopped parsley
- line the inside of the mug with the bread, butter side out.
- then line the bread with bacon
- pop in oven at 200c to cook slightly for 5 mins
- crack the eggs into the cups whole and add the spinach salt and pepper and back in the oven.
- looks better if you poke the spinach in with the whites without breaking the yolk
- cook until the yolk is nearly to your liking, top with the cheese and back in until its melted (I used mature cheddar)
- use a tbsp to remove and serve with a sprinkling of parsley (and big dollop of brown sauce)
