Pumpkin Nut Bread
- 3 13 cups sifted flour
- 2 teaspoons baking soda
- 1 12 teaspoons salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 3 cups sugar
- 4 eggs
- 1 12 cups pumpkin
- 1 cup salad oil
- 23 cup water
- 1 cup chopped nuts
- 1 cup semi-sweet chocolate chips
- Combine flour, soda, salt, cinnamon, nutmeg and sugar.
- Mix well.
- Add nuts and chips and mix.
- Beat eggs slightly.
- Add pumpkin, salad oil and water.
- Mix well.
- Pour egg mixture all at once into flour mixture and blend until smooth.
- Spoon batter into 2 greased pans (10 1/4 x 3 5/8 x 2 5/8).
- Bake in a preheated 350- degree oven for about 1 hour.
