Hearty Beef Ragout
- 3 pounds beef chuck, boneless, cut in 1 inch pieces
- 13 cup flour, all-purpose
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 8 ounces sausage links, precooked, cut into 1 inch pieces
- 2 cups leeks chopped
- 3 each celery stalks, cut up
- 3 each potatoes peeled, cubed
- 16 ounces tomatoes whole, canned
- 1 teaspoon oregano
- 2 each garlic cloves, minced
- 1/2 cup vegetable stock or chicken or beef
- 1 teaspoon flavoring
- 2 tablespoons flour, all-purpose
- 3 tablespoons water
- Wipe beef well.
- Combine 13 cup flour with salt and pepper.
- Toss beef cubes with flour mixture to coat thoroughly; place in crockpot.
- Add remaining ingredients except 2 tb.
- flour and the water in order listed; stir well.
- Cover and cook on Low setting for 7 to 12 hours.
- One hour before serving, turn to High setting.
- Make a smooth paste of 2 tb.
- flour and the water; stir into crockpot, mixing well.
- Cover and cook until thickened.
