Black Pudding (Irish) Recipe

  2. The preparation of this pudding may be impracticalthese days due to the difficulty of procuring fresh pig's blood and casings.)

  4. Stew liver in boiling salted water till tender.
  5. Remove liver, and mince.
  6. Reserve cooking liquor.
  7. Mix all ingredients in large bowl.
  8. Stir thoroughly till blended.
  9. Fill casings with mix.
  10. Tie off in one-foot loops.
  11. Steam for 4-5 hrs.
  12. Leave till cool.
  13. Cut into 1/2 inch slices as required and fry in warm fat on both sides till crisped.
