Vegan Pitas (Healthy and Kid-Friendly!)
- 2 loaves whole wheat pita bread (I like Toufayan Bakeries)
- 10 grapes (cut in half or diced, depending on size)
- 12 apple, diced
- 12 cucumber, diced
- 14 cup nuts, i like mine chopped
- 14 cup raisins
- 18 cup sunflower seeds
- 1 stalk celery, diced
- 2 cups lettuce
- 2 cups Baby Spinach, fresh uncooked
- 2 Morningstar Farms grillers, chik'n veggie patties
- 14-12 cup vegan mayonnaise (I like Veganaise)
- Cook veggie chicken patties (I use the microwave for about two minutes to two and a half minutes for two patties.)
- Set aside to cool.
- Dice all vegetables, fruit, and veg chicken patties according to how chunky you want your sandwich and place in a big bowl.
- Add veganise to the veggies and fruit and mix well.
- (I usually leave the lettuce and spinach out of the veganaise mix.

- Slice the pita bread into halves to make 4 pockets.
- Warm the bread slightly.
- This seems to make it a little more elastic when stuffing it.
- I find about 15-25 seconds in the microwave does the trick.
- Put chopped lettuce and spinach in the bottom.
- Add the veggie/fruit mix to the pita pockets and top off with a little more lettuce and spinach.
