Pasta Fagioli

  1. In a soup pot, sautee onions and ham in olive oil until onions and ham are translucent and a light golden color.
  2. Add celery and continue sauteing a couple minutes longer.
  3. Add beans and crushed tomatoes plus two cups of water, wine and salt and pepper.
  4. Bring to a boil then lower heat and cover and simmer for 45 minutes.
  5. Cook pasta separately, adding just before soup is served.
