Pasta Fagioli
- 3 tbsp olive oil
- 8 oz ham or pancetta
- 15 oz Cannellini beans
- 16 oz peeled crushed tomatoes
- 2 cup water
- 1/2 cup red wine
- 1 medium onion, chopped
- 3 celery stalks, chopped
- 8 oz Ditallini pasta
- 1 salt & pepper, to taste
- In a soup pot, sautee onions and ham in olive oil until onions and ham are translucent and a light golden color.
- Add celery and continue sauteing a couple minutes longer.
- Add beans and crushed tomatoes plus two cups of water, wine and salt and pepper.
- Bring to a boil then lower heat and cover and simmer for 45 minutes.
- Cook pasta separately, adding just before soup is served.
