Italian Meatloaf
- 1 cup boiling water
- 12 cup sun-dried tomato, packed without oil
- 12 cup ketchup, plus 1/3 cup
- 1 cup seasoned bread crumbs
- 1 small onion, finely chopped
- 12 cup fresh basil, chopped
- 12 cup shredded provolone cheese
- 2 large egg whites
- 2 garlic cloves, minced
- 1 lb ground round
- cooking spray
- Combine boiling water and tomatoes in a bowl; let stand for 30 minutes or until soft.
- Drain tomatoes, then finely chop.
- Preheat oven to 350.
- Combine 1/2 cup ketchup, bread crumbs, onion, basil, provolone cheese, egg whites, garlic and ground round in a large bowl.
- Add tomatoes to meat mixture.
- Shape meat mixture into a 9x5-inch loaf on a broiler pan coated with cooking spray.
- Spread 1/3 cup ketchup over meatloaf.
- Bake for 1 hour or until a thermometer registers 160.
- Let stand for 10 minutes before slicing.
- Cut into 6 slices.
