Italian Meatloaf

  1. Combine boiling water and tomatoes in a bowl; let stand for 30 minutes or until soft.
  2. Drain tomatoes, then finely chop.
  3. Preheat oven to 350.
  4. Combine 1/2 cup ketchup, bread crumbs, onion, basil, provolone cheese, egg whites, garlic and ground round in a large bowl.
  5. Add tomatoes to meat mixture.
  6. Shape meat mixture into a 9x5-inch loaf on a broiler pan coated with cooking spray.
  7. Spread 1/3 cup ketchup over meatloaf.
  8. Bake for 1 hour or until a thermometer registers 160.
  9. Let stand for 10 minutes before slicing.
  10. Cut into 6 slices.
