Celeriac and Walnut Gratin
- 1 large celeriac
- 1 12 tablespoons walnut oil
- 300 ml vegetable stock
- 12 cup chopped walnuts
- 100 g blue cheese
- Heat oven to 190C.
- Peel, quarter and thinly slice celeriac - can be done with slicing blade of food processor.
- Toss celeriac with walnut oil, season to taste.
- Place in a gratin dish, spread out evenly.
- Pour over stock, bake for 45 minutes.
- Scatter with walnuts and crumble over blue cheese.
- Cook another 15 minutes till crisp and golden.
