Fried Whitefish With Aioli
- 1 tablespoon garlic, minced
- 3 1/2 tablespoons water
- 4 teaspoons Dijon mustard
- 1/4 cup lemon juice
- 1 egg yolk
- 1 whole egg
- 2 1/2 cups soy oil
- 2 teaspoons salt
- 8 ounces white fish, sardines or any small baitfish will work
- 10 ounces all-purpose flour
- Combine all ingredients in food processor except than the soy oil.
- Turn on and slowly drizzle oil in until emulsion is formed.
- Season with salt and lemon juice as needed.
