Lean Turkey Meatloaf
- 2 lbs lean ground turkey, thawed
- 1 medium green pepper, finely chopped
- 1 medium tomatoes, finely chopped
- 6 fresh basil leaves, finely chopped
- 12 cup fresh spinach leaves, finely chopped
- 1 garlic clove, minced
- 12 teaspoon onion powder
- 1 tablespoon Worcestershire sauce
- 1 egg
- 15 -17 saltine crackers, crushed
- 1 cup cheddar cheese, finely shredded
- Preheat oven 400.
- Combine all ingredients except cheddar cheese in large bowl and mix well.
- Separate half of mixture and smooth out in loaf pan.
- Sprinkle 1 cup of the cheddar cheese and top with remaining part of meat mixture and smooth.
- Bake for 1 1/2 hour.
- If desired sprinkle 1/2 cup of cheddar cheese over top of loaf for the last 10-15 minutes.
