Succotash
- 1 cup lima beans (fresh, frozen, or canned)
- 1 cup frozen whole kernel corn
- 1/4 cup chicken stock
- 1 tablespoon butter
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Combine the ingredients in a large, heavy pot.
- Simmer, covered, for about 15 minutes over low heat.
- Increase the heat and cook for 30 minutes more, stirring occasionally.
- Serve hot.
