Flora's Veggie Quesadillas
- 1 large Green Pepper
- 1 large Onion
- 2 cup diced mushrooms
- 1 tbsp chilli powder
- 1/2 tbsp cumin
- 1 tsp corriander
- 1 packet of concentrated chicken stock
- 1/2 tsp smoked paprika
- 1 salt to taste
- 1 pepper to taste
- 1 cayenne to heat tolerance.
- 2 cup cheese
- 1 flour tortillas
- chop veggies and add to a medium heated skillet with a little bit of olive oil on bottom.
- put in all the seasonings and stock.
- saute until tender
- in a clean skillet spray the bottom with cooking spray.
- Place a tortilla on the bottom
- Put cheese on the bottom of the tortilla
- Spoon the veggies onto the top of the cheese
- then sprinkle more cheese on the top if the veggies
- top with another tortilla.
- heat on both sides until brown and cheese is melted.
- use a pizza cutter and cut into wedges
- put in your fave ingredients chicken, tomatoes, and beans would be good.
