John's Fresh Salsa Recipe johnecampbell

  1. Prepare the tomotoes.
  2. Cut the ends off of the Plum tomatoes, then half lengthwise leaving the core on the bias.
  3. Reserve the ends.
  4. Seed the tomatoes (run your fingers lengthwise through the body of the tomato; discard the seeds).
  5. Chop the tomatoes into 1/4" dice (slice lengthwise, then crosswise).
  6. Chop the tomato ends and add to the mix, if you have the patience.
  7. Chop the pepper into 1/4" dice.
  8. Chop the Red Onion into 1/4" dice.
  9. Combine the tomato, pepper and onion into a large bowl.
  10. Add 2 tsp salt, and stir.
  11. Let the mixture steep at least 15 minutes
  12. Meanwhile, prepare the corn.
  13. If using fresh, microwave or grill to prepare.
  14. Slice the kernels off of the cob.
  15. Add corn kernels to the bowl and stir again.
  16. Prepare the pepper(s).
  17. If using Jalapeno, seed the pepper and mince very fine (1/8" dice).
  18. If using chipotle, chop fine and add pepper and some of the Adobo to the bowl.
  19. Stir again.
  20. Add the following to the bowl: 1 Tsp sugar 10 Dashes of hot sauce (less is using Chipotle) 2-3 tbsp of Cider vinegar
  21. Stir, and let the mixture steep for 15 minutes to let the flavors develop.
  22. Taste, add the following in small quantities, until you achieve the desired balance: Sugar Salt Vinegar Hot Sauce
  23. Clean 1 bunch cilantro, removing stems.
  24. Chop the cilantro leaves to a rough chop.
  25. Add cilantro just before serving.
  26. Just before serving, take on final taste test adjusting the following as necessary: Taste, add the following in small quantities, until you achieve the desired balance: Sugar Salt Vinegar Hot Sauce
