Green Pea Salad With Mint Recipe
- 2 (10 ounce.) Packages frzn baby peas
- 3 carrots, peeled & shredded
- 2/3 c. thinly sliced scallions with tops
- 1/2 c. minced parsley
- 1/4 c. minced mint
- 1/2 c. fruity extra virgin olive oil
- 8 tbsp. red wine vinegar
- 1 teaspoon salt (optional)
- 1/2 teaspoon pepper
- 1.
- Combine vegetables, parsley and mint.

- Whisk together extra virgin olive oil, vinegar, salt and pepper.

- Toss together, refrigerateand serve cool.
- Serves 8 to 10.
