Tofu Nicoise Salad

  1. Whisk together Italian dressing, lemon juice, garlic and pepper.
  2. Let stand 10 minutes.
  3. Divide salad greens among 4 large salad plates.
  4. Arrange 4 tomato wedges and 4 slices of tofu on top.
  5. Divide green beans equally among salads.
  6. Scatter on mushrooms and 4 olives each.
  7. Drizzle each with 1 Tbs.
  8. dressing.
