Taste of Summer Corn Salad

  1. Cook the corn, drain, & cool (I microwave the corn six to eight minutes covered with wax paper --it's faster & it turns out much crisper).
  2. Cut off the kernels.
  3. In a large bowl, toss together the corn, tomatoes, onion, garlic, basil, oil, and vinegar.
  4. Season with salt & pepper.
  5. Chill until serving.
  6. Note: I've even added shredded mozarella cheese to this!
