Bran & Banana Muffins

  1. Preheat oven to 400 degrees F. Mix cereal and milk in large bowl.
  2. Let stand 2 min.
  3. or until cereal is softened.
  4. Meanwhile, mix flour, sugar, baking powder, cinnamon and salt; set aside.
  5. Add egg whites, oil and bananas to cereal mixture; mix well.
  6. Stir in dry ingredients just until moistened.
  7. Spoon into 12 greased muffin cups, filling each cup two-thirds full.
  8. Bake 20 min.
  9. or until wooden toothpick inserted in centres comes out clean.
  10. Cool in pan 5 min.
  11. Remove to wire rack; cool completely.
