Bran & Banana Muffins
- 2 cups 100% wheat bran high fibre cereal
- 1-1/4 cups skim milk
- 1-1/4 cups flour
- 2 Tbsp. sugar
- 1 Tbsp. Magic Baking Powder
- 3/4 tsp. ground cinnamon
- 1/4 tsp. salt
- 2 egg whites
- 3 Tbsp. canola oil
- 1 fully ripe banana, mashed
- Preheat oven to 400 degrees F. Mix cereal and milk in large bowl.
- Let stand 2 min.
- or until cereal is softened.
- Meanwhile, mix flour, sugar, baking powder, cinnamon and salt; set aside.
- Add egg whites, oil and bananas to cereal mixture; mix well.
- Stir in dry ingredients just until moistened.
- Spoon into 12 greased muffin cups, filling each cup two-thirds full.
- Bake 20 min.
- or until wooden toothpick inserted in centres comes out clean.
- Cool in pan 5 min.
- Remove to wire rack; cool completely.
