Potatoes With Warm Bacon Vinaigrette
- 3 lbs potatoes, peeled and cut in 1 inch cubes
- 6 slices bacon, chopped
- 12 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon Dijon mustard
- 1 teaspoon celery seed
- 12 cup cider vinegar
- 1 14 cups water
- Boil potatoes until tender.
- Drain and set aside.
- In large skillet, cook bacon until crispy.
- Set aside.
- In small bowl, mix rest of the ingredients.
- Mix all in bacon drippings.
- Cook and stir over medium heat until mix comes to a boil.
- Stir until thickens slightly.
- Add bacon.
- Put potatoes in serving bowl.
- Add dressing and toss lightly to coat.
- ENJOY!
- Prep time is for peeling potatoes and chopping bacon.
- Cook time is for boiling potatoes and making vinaigrette dressing.
