Gluten Free Cowboy Cornbread
- 1 12 cups cornmeal
- 12 cup rice flour (I use Authentic Foods Brand)
- 12 teaspoon baking soda
- 12 teaspoon salt
- 1 cup milk
- 2 eggs, beaten
- 2 tablespoons vegetable oil
- 2 cups sharp cheddar cheese, shredded
- 1 cup frozen corn, thawed
- 1 small onion, chopped small
- Combine first 4 ingredients, mix well.
- Add milk, eggs, oil, stirring well.
- Stir in remaining ingredients.
- Pour into greased 9 inch square baking pan.
- Bake at 350 degrees for 40 to 45 minutes until lightly brown.
- Yield 9 servings.
