Jalapeno Potatoes

  1. Cube cheese.
  2. Cook potatoes in boiling water to cover for 30 minutes or until tender.
  3. Drain and let cool.
  4. Peel potatoes; cut into 1/4 inch slices.
  5. Layer potatoes and next 4 ingredients in a well greased 12 x 8 x 2 inch baking dish; set aside.
  6. Melt butter in a saucepan; add flour and cook 1 minute, stirring constantly, until thickened and bubbly.
  7. Add cheese; stir until melted and pour over potatoes.
  8. Cover with aluminum foil.
  9. Bake at 350F (180C) F for 30 minutes; uncover and bake 15 minutes.
  10. Remove from oven; let stand 5 minutes.
