Dijon-Lemon Chicken with Feta Cheese
- Chicken
- 24 each boneless skinless chicken breasts (4 oz.)
- 2 tsp. salt
- 1 tsp. black pepper
- 1-1/3 cups all-purpose flour
- 1/2 cup vegetable oil
- Dijon-Lemon Sauce
- 1 qt. sour cream
- 1 qt. feta cheese, divided
- 2-2/3 cups GREY POUPON Classic Dijon Mustard
- 1/2 cup fresh lemon juice
- 1/2 cup heavy cream
- 2 tsp. black pepper
- Season chicken with salt and pepper; dust with flour.
- Pan-sear in hot oil on medium heat 6 min.
- on each side or until done (165 degrees F).
- Combine sour cream, half of the cheese, mustard, lemon juice, cream and pepper in saucepan.
- Simmer on medium heat until heated through and cheese is melted.
- Top 1 Chicken with 2-1/2 oz.
- Dijon-Lemon Sauce.
- Garnish with 1-1/2 Tbsp.
- of the remaining cheese.
