Cornmeal Muffins with Crab Stuffing

  1. Preheat oven to 190C.
  2. Lightly grease 12-cup muffin pan
  3. Combine crab meat, cheese, mayonnaise, Worchestershire sauce and parsley in a small bowl.
  4. Season with pinch of salt.
  5. Cover and refrigerate for later use
  6. Mix the dry ingredients.
  7. Stir in eggs, buttermilk, butter; whisk until combined
  8. Divide batter into greased muffin pan evenly till 3/4 full.
  9. Scoop 2 tbsp of crab stuffing into center of each muffin.
  10. Lightly press them in.
  11. Top stuffed muffins with the grated Cheddar
  12. Bake till golden brown, for 25minutes
  13. *For variety, may use cooked chicken meat, tuna, just use your imagination
