Ukrainian Baked Potato Squares

  1. Soften the bread crumbs in the hot milk.
  2. Pare, wash, and grate the potatoes on a fine grater.
  3. Pour off most of the potato water.
  4. Combine the potatoes with the bread crumbs and the remaining ingredients except the melted butter.
  5. Butter a shallow baking dish very generously.
  6. Spoon the mixture into it, and then sprinkle the top with the melted butter.
  7. Bake it in a moderate oven (350F) for 45 minutes.
  8. Cut into squares.
  9. Serve very hot with sour cream and cottage cheese.
