Leftover Breaded Turkey
- 1 cup bread crumbs
- 1 pinch salt
- 2 eggs, beaten
- 1/4 to 1/3 cup olive oil
- 1/2 tsp Mural of Flavor (Penzey's Spices)
- 10 thin slices cooked white meat turkey (dark meat can also be used if you prefer)
- In a large shallow bowl, combine bread crumbs, Mural Of Flavor and salt.
- Make sure the turkey is dry.
- Dip the turkey slices into the beaten egg, then the bread crumbs.
- Heat 1/4 cup of olive oil in a large skillet over medium high heat.
- Place the turkey in the pan and cook until the bottom side is golden, about 4 minutes.
- Flip and cook until the other side is golden, about 3 minutes.
- Depending on the size of your slices, you may need to cook them in 2 batches, in which case keep the 1st batch warm in a 200 oven, and add the remaining olive oil to the pan if needed before cooking the remainder.
