Meatloaf Burgers with Sauteed Carrots
- 1/2 c. water
- 1 tbsp. margarine or butter
- 1 bag baby carrots
- salt
- Pepper
- 1 tbsp. brown sugar
- 1/4 c. ketchup
- 1 tbsp. spicy brown mustard
- 1 1/4 lb. 90% lean ground beef
- 1 stalk celery
- 1/2 small onion
- 1/4 c. plain dried bread crumbs
- 1 clove garlic
- 2 tsp. Worcestershire sauce
- 4 potato rolls
- 4 lettuce leaves
- In 12-inch skillet, heat water and margarine on medium until simmering.
- Add carrots, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper; cook, covered, 10 minutes or until carrots are tender.
- Uncover; stir in sugar and cook 3 minutes or until carrots are coated and liquid evaporates.
- Remove from heat; cover and keep warm.
- Meanwhile, lightly spray ridged grill pan or skillet with nonstick cooking spray, then heat on medium until hot.
- In cup, combine ketchup and mustard.
- In large bowl, mix 1 tablespoon ketchup mixture with beef, celery, onion, bread crumbs, garlic, Worcestershire, and 1/4 teaspoon salt until blended, but do not overmix.
- Shape beef mixture into four 3/4-inch-thick burgers, handling meat as little as possible for best texture.
- Place burgers in hot grill pan; cook 10 to 12 minutes for medium or until desired doneness, turning burgers over once halfway through cooking.
- Serve burgers on rolls with lettuce and remaining ketchup mixture.
- Serve carrots on the side.
