Taco Sauce (Salsa) Recipe

  1. Skin and core tomatoes.
  2. Bring to a boil and drain in a colander, reserving juice.
  3. Use 1 1/2 qts tomato pulp.
  4. Put tomato pulp in kettle along with the next 10 ingredients.
  5. Cook together till onion and peppers are soft.
  6. Mix last 5 ingredients together till smooth.
  7. Gradually add in this to the boiling tomatoes.
  8. Stir and cook till thick.
  9. Put into pint jars and seal.
  10. Process in pressure cooker at 5 pounds pressure for 10 min or possibly in boiling water bath for 15 min.
  11. Makes 7 pints.
